Well, everything but the buttery Ritz topping because otherwise it’ll get soggy.īut everything else, you can mix together right in the casserole dish and put it in the fridge and put in the oven later. With this casserole recipe, you can put it all together ahead of time.

Or at least prep the parts of a meal that you can. If you’re anything like me, you like to prep meals ahead of time.

How to prep this broccoli, rice, and chicken casserole ahead of time It was actually fairly easy to pick off the pieces because it was just like an entire sheet of burnt of Ritz crackers so you could pick them off in large pieces. I ended up picking off all the burnt pieces (with some left behind, as you can see in the photos above, but don’t they just look like ground pepper flakes?) and was able to salvage the casserole!

Good thing it was a nice-ish day out so having the windows and doors open weren’t a huge deal. I basically just had to wait until the smoke cleared. They’re all connected to each other so when one goes off, the others go off too. I had to get on my laptop to Google how to turn them off, but I still couldn’t get them to turn off!!

I went and opened all the windows and doors, and the fire alarm still went off. Opened the oven door to see a carbon black casserole and smoke was coming out of the oven. I immediately knew what was up and said, “shit!” and ran into the kitchen. Your nose knows when you smell that good ‘ole burning scent. So, I stuck the casserole under the broiler, for what I intended to be only 3-5 minutes, but I forgot to set the timer so I went into the living room and got on my laptop and started catching up on email. Ha, I definitely got that color…I also got an entire house’s fire alarm going off. That is what happens when you forget to set the timer and stick the casserole under the broiler to just get the crust a “bit more color.” You probably can’t really tell, but the entire top of this casserole was CARBON BLACK. Wanna know the truth about the pictures of this casserole? This meal comes together in less than 45 minutes and it takes one bowl and one casserole dish! Put this together ahead of time and pop it in the oven when you get home from work! If you’re missing the cracker crunch after reheating, just throw a couple more crumbled crackers on top and you’re golden. This easy broccoli, rice, and chicken casserole is topped with a buttery Ritz cracker crust. It heats up beautifully and I truly believe it has even more flavor the second time around. This casserole is EVEN BETTER the second time around. Oh, and the best part? Yep, it gets better. It’s all in there – it’s a complete meal. Just look at that spoonful of deliciousness. It gives the casserole such a wonderful buttery flavor. Just look at this wonderful crunchy cracker topping! This has to be one of my favorite aspects of this dish. I just like to take the “short road.” In my opinion, it ends up more flavorful using a rotisserie chicken. Rotisserie chicken works great for this casserole (which is what I used), but you can certainly cook and shred your own chicken rather than using rotisserie. I’m all about getting dinner on the table in minutes flat cooking meals you can set and forget or place into the oven and just let cook. In fact, that’s what I used it for in this dish.Īs I mixed the other ingredients, I steamed my broccoli to perfection. I steam my veggies before throwing them in my meat dishes and casseroles. I also use it when I want to shorten oven cook time. It’s a life saver when you have multiple things going on in the oven and on the stove. I want to introduce you to one of the loves of my life. It’s perfect for a busy week night or lazy weekend dinner! This Chicken Broccoli Ritz Casserole I’m sharing today is creamy, cheesy and topped off with crunchy Ritz crackers. Beyond the deliciousness and comfort that casseroles provide, casseroles are just.easy. Don’t we all? Maybe it’s my “excuse” for wanting to serve my family casseroles every night if I could. If there’s one positive that comes out of this cold weather snap, it’s my food cravings when we go through something like this.
